Pilgrim Pies

Fall is here!  It is time to bake up some of my favorite fall desserts.  Pilgrim pies are the cookies your kids may have had in Pre K at St. Paul.  Oooh Yum it is a must try you can't have just one.


Pilgrim Pies (PK4) recipe

2 eggs
2cups light brown sugar
1 cup vegetable oil
1tsp vanilla extract
1 15oz can pumpkin
3 cups flour
1 tbs pumpkin pie spice
1tsp baking powder
1tsp baking soda
1tsp salt


cream cheese filling
8oz cream cheese softened
1/2 cup butter softened
2tsp vanilla extract
4-5 cups confection sugar

heat oven to 350
Beat eggs, brown sugar, oil and vanilla in mixing bowl until smooth.
Stir in pumpkin.  In separate bowl combine flour, pumpkin spice, baking powder, baking soda and salt.
Add dry to egg mixture 1/2 cup at a time.  Blending each time until smooth. Drop heaping tbs of batter onto ungreased cookie sheet.  Using a moist finger or back of spoon to slightly flatten each mound.  Bake for 12 minutes, cool completely on wire rack.

icing
Beat cream cheese, butter, vanilla until light and fluffy.  Mix in sugar 1/2 cup at a time until frosting is spreadable.

Assemble
turn 1/2 cookies bottom side up and spread frosting on each one.   Makes 10-14 can make smaller to get more....Must refrigerate for storage.
